Buffalo Blue Turkey Meatball Recipe | How To Make Buffalo Blue Cheese Turkey Meatballs

Being the health-nut that I've become, I wanted to find a recipe for something that was quick, easy, and less caloric than the traditional meatball. The answer? A Pinterest recipe for buffalo turkey meatballs, modified to make them even healthier.

The original recipe called for the meatballs to be made with cream cheese, but I replaced that with protein-packed cottage cheese instead. It also called for a spicy buffalo sauce made with butter, but I just mixed Frank's hot sauce right into the meat.
  • 1 lb. of lean ground turkey
  • 2 oz. cottage cheese (strained)
  • 2 egg whites
  • 3 tbsp. low-fat blue cheese
  • 1/4 cup hot sauce
  • Sprinkle of black pepper

Preheat oven to 375

In a large mixing bowl, combine turkey, cottage cheese, egg whites, blue cheese, hot sauce, and pepper. Use your hands to make sure all of the ingredients are incorporated.

Form the mixture into 1 inch (or so) meatballs. Place on a baking pan (I like to line mine with tin foil for easy clean up)

Bake for 20-25 minutes, let cool, then enjoy!
